When we first saw the space that is now The Belle General we knew instantly it had massive potential and on the spot we signed the lease, even though it was filled with sad & broken industrial kitchen equipment, had salmon and maroon colored walls and a bizarre wall dividing the room. The location was amazing and we couldn't believe that it was just sitting there waiting for us and a its new incarnation as The Belle.
What followed was a whirlwind of about 8 weeks renovating and getting everything ready for opening day. Sarah, Kyla and I have always toyed with the idea of opening our own place, having many different conversations over the years with heaps of different ideas. What we have ended up with we never could have imagined.... a bustling beach side cafe!
This came about with the experience of years in the hospitality industry and knowledge of the local area as well as interior design, project management, developing chef and pastry making skills and many other skill sets that apparently we have between us: there was and still is so much involved in it and I am thankful for the amazing women that we are today, not only for who we are and what we have done (& continue to do), but for the relationships we have developed over this time and the personal growth involved in a commitment of this level. The commitment we have made to each other and the business is worth celebrating – sure at times it gets a little tough but at the end of the day we love, trust and respect each other and this is what we return to. So in turn we can continue to grow the business and keep the space as a loving and inviting atmosphere.
